bayleaf banana bread recipe
1 EGG
2 RIPE BANANAS MASHED
⅓ CUP MELTED BUTTER
⅓ CUP BAYLEAF SYRUP
1 CUP FLOUR
1 TSP BAKING POWDER
½ TSP BAKING SODA
¼ TSP SALT
1 TSP VANILLA EXTRACT
CHOCOLATE CHIPS (OPTIONAL)
INSTRUCTIONS:
- Preheat oven to 350
- In a bowl mix flour, baking powder, baking soda and salt.
- In another bowl mix butter, syrup, egg, vanilla and mashed bananas
- Gradually fold in dry ingredients
- Pour batter into a buttered/lined pan.
HISTORY:
Growing up, my mom made the kind of banana bread you could never forget. It filled the entire kitchen with the scent of cinnamon and nutmeg, perfectly moist, soft, and bouncy every single time. Baking was her thing, and somehow she always knew when I needed a little extra comfort or a sweet treat. I’d come home from school and find her in the kitchen, just pulling it out of the oven.
To this day, banana bread still feels like home.
This version is a little different from the one I grew up with, but it gives me the exact same feeling, warm, nostalgic, comforting. The kind of recipe that makes you cut “just one more slice” until suddenly half the loaf is gone. Instead of traditional sugar, I used my bayleaf syrup to bring a deeper richness alongside ripe bananas, soft spices, and all the little details that make homemade baking feel special.
